You can either sell or salvage your gear. However, if you aren't sure what these two functions do, you might not understand the best thing to do. Selling and salvaging will both help you immensely but in different ways. Here is a guide on when you should salvage and when you should sell.
Salvaging items can be extremely helpful for you. When you salvage your armor, you can gain some valuable resources. These resources can help you upgrade your armor or craft items later on. However, it isn't recommended that you upgrade armor until you are later in the game. Early on, you will constantly find better gear. You want to use these resources on armor that you will use for a good amount of time. If you need these resources, you should start salvaging them to collect them.
In addition to those resources, you can obtain Veiled Crystals. These items are given to you when you salvage rare items. They can be used when you imprint Aspects onto your items. You will need certain amounts depending on the Aspect and item. These Aspects are pretty important and can be a huge help if you use them correctly. If you are going to imprint Aspects, start salvaging the rare items you don't need.
You can also salvage items in order to transmog them later at the wardrobe. If there is a hammer on the item when looking at it in your inventory, that means you can salvage it and obtain the cosmetic to transmog later. If you want to be able to have these transmogs for later, make sure you salvage the items rather than sell them.

Selling items can be as helpful as salvaging them. When you sell items, you will only obtain gold. However, this is the main currency in the game, and you will need a good amount while playing. Anytime you are upgrading items, you'll need gold. You can also use this currency to buy items from merchants. If you don't need to collect resources, Veiled Crystals, or transmogs, you may want to just consider selling the items and saving up your money.
